Method

  • Place the Ainsley Harriott Premium Cous Cous into a medium sized saucepan.

  • Add the olive oil and the boiling water.

  • Bring back to the boil. Remove from the heat, cover and leave for 5 minutes.

  • Return to a low heat. With a fork, gently stir in the sun-dried tomato paste until well mixed and then the cherry tomatoes. Remove from the heat.

  • Gently stir in the chopped basil.

  • Season to taste before serving.
