Method

  • Preheat oven to 220°C/425°F/Gas Mark 7.

  • Place butternut squash and onion into baking tray, drizzle over a little olive oil, sprinkle over thyme, season and pop into hot oven for 20-25 minutes until lightly charred and cooked through.

  • Prepare Ainsley Harriott Cheese Flavour Risotto according to the instructions on the carton.

  • Stir in the roasted squash and onion and serve with grated Parmesan cheese.
